Meet the Perrys

We’re Dylan and Fidela Perry, owners of Crossed Cannons Coffee. Ever since we’ve been together, great coffee has made an appearance at every wonderful experience and major life event. Whether it was having a latte at a home brewing concept cafe in Kyoto, Japan, or Fidela serving professional-grade espresso beverages at her baby shower, we will always go out of our way for the perfect cup.

We brought this philosophy to Crossed Cannons Coffee from its inception. We’ve long known that we wanted to serve specialty espresso in a mobile kei truck format; in fact, we established the LLC in 2020, five full years before we sold our first cup of coffee. In that time, we developed and built our concept, bringing all aspects of the rollout to our exacting standards in time for our debut in September of 2025.

What exactly is our philosophy? At our core, we have a goal and a motto. Our goal is to provide our clients with a specialty coffee to rival any brick-and-mortar third wave cafe, in a compact, efficient, aesthetic, and welcoming mobile kei truck format. Our motto, born from Dylan’s time as an Army Field Artillery Officer coupled with Fidela’s extensive experience in third wave cafes across the country, is that “Making coffee is like directing artillery. Identify and control every possible variable, and you’ll produce a predictably excellent result, every time.”

Why a kei truck? We regularly travel to Japan, and have fallen in love with its culture, people, sensibilities, and approach to many things in life. Japanese efficiency, thoughtfulness, and commitment to perfection manifests in its automotive industry and its food and beverage culture. We thought that the kei truck was a fantastic canvas for us to display our appreciation for and interpretation of these concepts here in the Inland Northwest. Plus, it has the “ice cream truck effect;” people can’t help but smile when they see it coming!

The truck is 1-of-1, fully custom designed by Dylan and built by local vendors here in Spokane Valley, and Fidela creates seasonal menus showcasing unique, high-quality ingredients and innovative flavors. If you’re after a classic cappuccino or one of her signature creations, we have something for every coffee lover.
